Rice with fruit

Preparation time:
50 min (medium complexity)

Ingredients:
150 gr. long grain rice, 125 gr. sugar, 1 vanilla sugar, 75 cl. milk, 20 cl. cream, 2 egg yolks, one stick of vanilla, one teaspoon of rum diluted 20 gr. butter, 2 wire mint. Fruits: 200 gr. raspberry, 200 gr. blueberries 2 peaches, apricots 4

Preparation:
Pour rice into a pot of boiling water. Place pan on fire and let boil two minutes, then drain it. Put milk to boil with sugar and vanilla stick, long cut off. Pour rice in saucepan with milk, put a lid and let it simmer slowly, about 50 minutes (rice should absorb all the milk). Remove the vanilla stick. Take the bowl from the heat and incorporate the egg yolks one by one. Diluted rum scented rice and let it cool. Place cream and vanilla in a easily incorporate cooled rice. Clean peel peaches, apricots, wash, dry and cut them to pieces. Incorporate them, along with raspberries, in rice milk. Grease a Savarina with butter, fill with rice mixed with fruit, cover with plastic form and put it in the refrigerator 2 hours. Pour rice on a platter, fill the middle with a few raspberries and garnish with mint leaves.
Serve cold.
